With 12 hectares of vineyards of local varieties and hazelnut trees, the history of the Cascina Tavijn winery dates back more than a century. Nadia Verrua, the fourth generation of the family, leads the winery. On a terroir of gentle sandy slopes, she seeks to intervene as little as possible so that the native varieties can fully express themselves, creating rustic and joyful wines.
Toc, meaning “crazy” in the local dialect, is the name Nadia has given to her experiments. Made from Slarina, the grapes come from the vineyard of a farm that preserves endangered varieties in Pinerolo, near Turin. Fermenting the whole bunches for two months, and aging for 12 months in stainless steel tanks, results in an aromatic and easy-drinking red. A crazy idea from Nadia – and endangered!
