After working in several wineries, in 2015 John Almansa decided to produce his own wines using a biodynamic and regenerative agriculture approach in the French region of Gard. His vineyards share the spotlight with olive trees and sheep, which guarantee a natural maintenance of the terroir and enrich the limestone clay soils with organic matter.
The Vertebral, vinified with spontaneous fermentation, is made with 80% Ugni Blanc, a variety present in the region since the 14th century. The remaining 20% is made with Cinsault in “blanc de noirs” format, where the must does not have prolonged contact with the skin of the grape, thus maintaining its light color. The wine ages for a year in used 600-liter barrels and fiber tanks, which gives it complexity and depth. A different and original wine, perfect for celebrating the Mediterranean.
